1/2 c. olive oil 2 Tbsp. red wine vinegar 2 tsp. dried Greek oregano Kosher salt and freshly ground black pepper 4 medium tomatoes, cut into wedges 1 small red onion, halved and thinly sliced 2 English cucumbers, peeled, halved lengthwise, and cut into 1/2-inch-thick slices 1 c. pitted kalamata olives 1 (8-ounce) block Feta, cut into large cubes
Whisk together oil, vinegar, and oregano in a bowl.
Season with salt and pepper.
Combine tomatoes, onion, cucumbers, olives, and Feta in a bowl.
Drizzle with desired amount of dressing and toss gently to coat.
Serve immediately with remaining dressing alongside.
