Dijon mustard 1 tsp. pure honey Kosher salt and freshly ground black pepper 1 (5-ounce) container arugula 1/4 c. thinly sliced red onion 1/4 c. chopped roasted and salted almonds 1 medium peach, sliced into wedges 1 1/2 oz. crumbled blue cheese (about 1/3 cup)
Whisk together oil, vinegar, lemon juice, garlic, mustard, and honey in a bowl.
Season with salt and pepper.
Add arugula, onion, almonds, peaches, and blue cheese, and toss to combine.
